Late Shree CHIMANLALJI KHANNA
Every plate served here reflects that belief:
That quality matters,
That ingredients matter,
That food, when made with care, becomes Memory.
That is the legacy of Shree Chimanlalji Khanna
This restaurant was founded by the Late Shree Chimanlalji Khanna, who believed that
good food begins with Memories…long before it reaches the table.
His vision was to bring an authentic taste of home to Australia that stayed true to its ethnic
origins; food that tasted as it should, without compromise or replacement.
To Him authenticity was not about appearance or trend; it was ingredients, method, and care.
He had a deep love for food innovation and creation, and he approached cooking with the
same passion he applied to life.
Every ingredient mattered. He insisted on using only the Freshest Ingredients, not because it
sounded impressive, but because he understood that freshness is the foundation of flavour.
Produce had to be vibrant, spices had to be alive with aroma, and dairy had to be treated with
respect.
If something was not good enough to serve at home, it was not good enough to serve.
Central to his cooking philosophy was Pure Desi Ghee. To him, Ghee was not an indulgence
or a garnish; it was essential. It is the base of Indian cooking and the carrier of flavour. He
believed that food prepared with real ghee has depth and honesty. That is why he insisted on
using only pure desi ghee.
Quality, in his view, was never something to negotiate.
He held a firm belief that food is memory.
Food carries the stories of where we come from and who we eat with.
A dish can remind someone of a childhood kitchen, a family celebration, or a place left
behind, the narrow lanes filled with vibrant childhood outings, and the after-school evening
visits to the stalls.
He understood this instinctively.
It shaped the way he created his Mithais (Indian Desserts) and the way he served people.
His goal was not simply to fill plates, but to offer something familiar and grounding to
those who missed home, & something genuine to those discovering Indian food for the first
time.
His passion for making authentic mithais reflected this belief.
Sweets required patience, precision, and restraint.
Milk had to be reduced slowly.
Sugar had to be balanced, not forced. Ghee had to be fresh and clean, never heavy or stale.
He took pride in doing things properly, even when no one was watching.
For him, mithai was not about decoration; it was about crafting excellence
He wanted the best for his customers because he saw Joy on their faces as they enjoyed their
meals.
Each dish carried a responsibility to be consistent, honest, and worth returning for.
He thrived when interacting with people, listening to what they enjoyed and what they
missed, and adjusting without losing the core of what he believed in.
Those who knew him personally often said he was the most respectful man in every room.
It showed in his judgment, standards, and in his understanding of both food and people.
He did not chase attention, but he earned respect.
Today, his legacy continues in the way this kitchen works.
We still choose the freshest ingredients because that is how flavour begins.
We still cook with pure desi ghee because that is how depth and authenticity are preserved.
We still believe that food should be made carefully, without shortcuts, and without
pretending to be something it is not.
This restaurant exists because one man believed that Indian food deserved to be treated
with Respect, even far from home.
His vision was not about nostalgia alone, but about continuity, carrying tradition
forward without losing its meaning.
Every plate served here reflects that belief:
That quality matters,
That ingredients matter,
and That food, when made with care, becomes Memory.
That is the legacy of Lt. Shree Chimanlalji Khanna.
